Comments: This is the first s-grind I’ve ever done. It is essentially a slight convex grind ground to a zero edge and then belly ground the center out to really enhance food release. Potatoes beware! It is ~ 0.09” thick at the heel spine and tapers greatly from there to the point. The handle is my western style handle with a rounded front bolster to mimic the feel in hand of an integral chef knife. Balance point right in front of the bolster due to the lightness of the blade. Sharpened on Japanese water stones and ready to work. This is an absolute killer of a knife!
